Banana Bread


  • 2 tbsp ground flax seed mixed with 6 tbsp water

  • 3 over-ripe bananas

  • 100g golden caster sugar

  • 80g vegetable oil

  • 1 tsp vanilla essence

  • 100ml soya milk (or nut milk of choice)

  • 250g self-raising flour

  • 1 tsp bicarb

  • Pinch of salt

  • 50g chocolate


  1. Preheat oven to 180C and grease a loaf tin and line with re-usable baking parchment.

  2. Mix the flaxseed with the water to make the flax egg and leave to thicken.

  3. Mash the bananas with a fork and combine with sugar and oil.

  4. Mix in the flax mixture, vanilla and soya milk.

  5. Fold in the flour, bicarb and salt.

  6. Stir in chopped up chocolate.

  7. Pour into tin and bake for 45mins or until a skewer comes out clean. (If you can avoid temptation it is best to wait until it has cooled to cut it).
