4-6 servings depending on portion preference. This can be used for meal prep and can also be frozen.
Using prices from Aldi I calculated that these ingredients would cost £3.35, therefore less than £1 per portion.
Ingredients
350g plain white rice
1 leek
1 large tomato
1 yellow pepper
50g frozen peas
Tin of butter beans
1 clove of garlic crushed
2 tbsp olive oil
2 tbsp smoked paprika
2 tsp turmeric
1tsp salt
½ tsp black pepper
600ml hot vegetable stock
Optional lemon to serve
Method
1. Preheat oven to 200C
2. Wash rice until water runs clear, drain, and add to a large pot with a lid.
3. Wash the leek, finely, slice and add to the pot
4. Slice the tomato and add to the pot
5. Finely slice the pepper and add to the pot
6. Pour in the frozen peas.
7. Drain and rinse the butter beans and add to the pan (rinsing them can make them a bit more digestible for those who are sensitive to beans)
8. Crush the garlic and add to the pan
9. Add in the olive oil and spices
10. Stir the dry ingredients to disperse the spices and garlic but try and keep most rice to the bottom of the pan so it can get covered in liquid.
11. Pour over the hot vegetable stock
12. Cover tightly with lid (if you don’t have a lid you could use foil) and bake in the oven for 40 minutes
13. Remove from oven and leave to stand with the lid on for 10 minutes
14. Fluff up rice with a fork and serve, option to squeeze over some lemon.
