Chickpea ‘Tuna’ Sandwich Filler


  • 1 can of chickpeas

  • 2 sheets of sushi nori

  • 1 tbsp soya sauce

  • 100g sweetcorn

  • 2 tbsp vegan mayo


  1. Drain the chickpeas and mash with a fork until every chickpea is broken up.

  2. Roughly chop the nori sheets and then add to the bowl with the chickpeas, then add in the soya sauce, sweetcorn and mayo. Stir everything together.


This will fill 3-4 sandwiches depending on how thick you fill them.

You could also stir it into cooked pasta and bake in the oven to make a tuna pasta bake or have it on a jacket potato.
