Ingredients

75g plain flour

Pinch of salt

½ tsp baking powder

½ tsp cinnamon

250ml non- dairy milk

1 tsp vanilla

4 thick slices of stale bread or toast

Knob of non-dairy butter
Method

In a large jug mix the flour, salt, baking powder and cinnamon. Slowly combine the milk to make a thin batter, then stir in the vanilla.

In a shallow bowl add a slice of bread and cover with the batter, turn it over and allow it to to soak up the liquid. Heat up a bit of the butter in a frying pan and add the batter-soaked bread, flip it over after about 2-3 mins. Add another slice of bread to the shallow bowl to allow it to soak while the other is cooking and repeat this until you have cooked all 4 slices. The French toast is done when it is golden and crispy on the outside, I usually put the cooked ones in the oven on a low temp so that they stay warm while the others are cooking.
