• 1 large baking potato

  • ½ white onion

  • 1 flax egg (1 tbsp ground flax seed + 3 tbsp water)

  • 3 tbsp flour

  • 1 tbsp vegetable oil

  • Salt and pepper to taste


  1. Preheat oven to 200C

  2. Grate potato, leave skin on!

  3. Combine grated potato with finely chopped onion, flax egg and flour. Season with salt and pepper.

  4. In a non stick frying pan heat 1 tbsp of vegetable oil. Form your hashbrowns in your hand- make into golf ball sized spheres, place into the frying pan and spread out with the back of a turner.

  5. Fry both sides until lightly browned, place on a baking tray.

  6. Bake for 15 mins.
